Sauce making is a fun and rewarding hobby for a lot of folks out there. Over the past few years the hot sauce industry has grown to over one BILLION DOLLARS in the United States alone. What that means for you is that you have a huge variety at your fingertips to try out, collect and use in your everyday culinary activities. That is a huge plus! For those of us that love to create our own hot sauce concoctions at home, in our commercial kitchens, or restaurants, it is essential to have the right equipment for the job.
I have posted a few recommendations for the beginner to advanced hot sauce maker here in my equipment blog and I can't go on without posting a review of this BEAST of a tool. The Waring immersion blender has been one of the absolute best additions to my hot sauce making tool kit.

Review: Right out of the box this blender is extremely simple. It has two main parts; the motor/control unit and the shaft. The shaft twists on and off and is able to be swapped out for other wand sizes or attachments. The handle is strong rubber which makes it easy to hold on to and easy to clean. There is a 9-speed power selector on the front of the power unit making it very easy to increase and decrease speed while your are blending. The power cable is heavy duty and stays out of the way while working because it is attached at the top of the handle (this is important to keep it out of your food). One of the cool features of this tool is that you can lock the power on so you don't have to maintain pressure on the trigger. I have seen many people build or purchase a clamp or bracket for the blender to keep it fixed over their pot while blending. This allows you to move around the kitchen and continue working while the blender does all of the hard work.
Cleaning the wand is easier than ever. There are no small parts to deal with and the blade housing is easily accessible. The wand is dishwasher safe so you don't have to deal with hand scrubbing or disassembly. The motor is well contained and easily wiped down after each use.
The ONLY drawback that I have for this product is the weight. If you intend on mixing for a long period of time while holding the mixer your arm will most likely get a bit tired as it weighs a little more than 8lbs. This, however, is easily mitigated by using a bracket or ensuring that your pot is tall enough to lean the blender on while in use.
